The RESTRUCTURE clinical trial will be featured at the upcoming IUNS-ICN 2025, a key international conference in the field of nutrition. The trial’s findings will be presented during a symposium entitled “Ultra-Processed Foods and Energy Balance: More than Just Food Composition?” (for further conference details, please visit IUNS-ICN 2025).
Chaired by Dr. David Mela and Emeritus Professor Kees De Graaf, the session will begin with an introduction from the session chairs, followed by Professor Edith Feskens (Wageningen University & Research) providing an overview of recent developments in dietary epidemiology, particularly the associations between UPF consumption and health outcomes.
The symposium will then focus on the RESTRUCTURE trial’s contributions. Assistant Professor Marlou Lasschuijt (WUR) will detail findings related to the effects of meal texture and eating rate on energy intake from UPF meals. This will be complemented by PhD candidate Marieke van Bruinessen’s presentation comparing metabolic changes in UPF-fast versus UPF-slow diets. The session will conclude with Professor Ciarán Forde (WUR) discussing the broader implications of these findings for public health guidance and potential food industry reformulation.
This symposium aims to advance the scientific understanding of how factors such as eating rate may modulate energy intake from UPF-rich diets and contribute to metabolic outcomes.
